MEET THE CHEF
Mediterranean-Inspired. California Fresh. That’s how we describe Plateia, the UCLA Luskin Conference Center’s onsite, full-service restaurant and lounge. But those two phrases also describe the heart and soul of Plateia’s Executive Chef Todd Sicolo.
What better credentials to bring to this new endeavor than growing up in the streets of Brooklyn with a food-loving, multi-ethnic family and then later moving to upstate New York and experiencing the realities and joys of farm life and what “fresh” really means?
In California, Todd is in his element. He brings to LCC a passion for harnessing the goodness of fresh, sustainable foods for his guests. He sees partnering with local food producers a must. And he fosters a creative approach that sends him constantly searching for new ways to exceed guest expectations—all this in L.A., at the heart of one of America’s most diverse and food-accessible regions in America. As he says, “What more could a guy like me ask for?”
Guests at Plateia can expect both familiar and unconventional offerings based on time-honored culinary techniques from Mediterranean cuisines. Many dishes featured on our menus are influenced by France, Italy, Greece, and Spain.
Todd, however, is quick to remind us that “Mediterranean” cuisines include those from North Africa and the Middle East in addition to those of Europe. Look for Plateia’s daily tagines, mezze plates, and more.
And don’t forget Dessert. Todd’s culinary team has created a variety of sweet treats like apple tart-tartin with saffron anglaise, a “de-constructed” cheesecake, and housemade gelato in a variety of creative flavors like Malted Chocolate Chip and Vanilla & Honey Lavender.
Todd comes to LCC with more than 15 years of experience as executive chef for some of America’s outstanding hotels and resorts, and is a graduate of the Culinary Institute of America.
